Home-schooling? 5 easy recipes for your child’s (at home) school lunches

Running out of ideas for school lunches during this lockdown? Here are a few easy to cook lunches to keep everyone happy. Simple recipes that include many stock cupboard items to create healthy lunches – all of the recipes take less than 20 minutes prep time.

1.    Pita Pizza

A quick 10 minute  recipe that makes a delicious pizza alternative.

All you need is some pita bread, tomato sauce, and whatever toppings you may desire and get as creative as you want. The best part is that you can get the children to top their own!

2.    Homemade baked beans on toast

A homemade take on an delicious classic. Use whatever tinned beans that you may have in the house. Flavour the sauce with BBQ, Ketchup or some sweet chilli. Minimal chopping required and a healthy lunch that everyone can enjoy.

3.    Pasta salad

 Most store cupboards will have a pasta variety of some sort, stored away. This simple recipe is quick and easy. Most of the ingredients used for the sauce are ones that will most likely be in the cupboards and add in any extra veggies that may be in the fridge. Enjoy!

4.    Baked chicken tenders

With chicken nuggets often being a favourite of many children, this recipe is a simplified healthy version. Either use shop bought breadcrumbs or if you have any bread that’s starting to get old, whizz it up in a food processor or chop finely.

5.    Pesto, cannellini bean and tuna jackets

This is a really versatile recipe and can be switched up any way you like. You can use either sweet potatoes or a normal roasting potatoe. If you have the time then put them in the over to cook, if not pierce them and microwave for around 5-8 minutes.
